Bamboo shoots contain about 90% water, low in fat and calories but rich in fiber. It is also reported that bamboo shoots have cancer prevention properties. It is also effective in decreasing blood pressure, cholesterol and increasing appetite. It is now a widely consumed vegetable and is rich in phytosterols. Due to consumer demand for something new and exotic, bamboo shoots finds an important place in the traditional cuisines of the food industry.At present bamboo shoots are largely sold in the unprocessed form. They are harvested from homestead in clums and brought to the local market for sale.
The shelf-life of bamboo shoot is limited and they have to be sold immediately after harvest. The peak period of availability of the shoot is from June to October. The price ranges from RMB. 3.50/kg to as high as RMB. 6/kg depending upon the availability and demand.
Bamboo shoot is a young clum harvested at the time or shortly after it appears above the soil surface. China possesses about 126 of the total bamboo species covering a total area of about 1, 00,000 sq. kill. The large area of covering is due to its plantation in and around house premises and contributes to 12.8% of the total forest cover of the country. The edible characteristic of bamboo species should be given due importance due to the fact that it not only contributes delicacy but also therapeutic value.
Bamboo shoots are shredded, sliced, striped or cut into cones according to its utility and as per the consumer demand. Next step is boiling which is done in hot water for about 10 min. Boiling is repeated three times and after each time boiling water is discarded and fresh water is used to remove bitterness and unwanted foreign matters. This is followed by storing. Storing is done in brine solution. The concentration of brine solution is in the rate of 5% salt and 1% citric acid in 100 mI. water. The final step is packaging. Vacuum packaging is done usually in 100 gm packets containing 25 ml. brine solution.
From time immemorial bamboo shoots have been used as culinary item and find an important place in the diet of the people of South East Asian countries. In China country Bhutan has been consuming bamboo shoot either raw or processed because of its exotic taste, flavors and medicinal value.
